Oatmeal Chocolate Chip Cookies

I was craving oatmeal chocolate chip cookies and I don't really have a favorite recipe so I used the one on the oatmeal container! I forgot to lay out the chocolate chips!

One of the great things about this recipe is I only used one bowl. And I didn't even use a mixer as the instructions suggest. First I mixed the butter, brown sugar and vanilla together. Then I threw in the rest of the ingredients right on top and mixed. Easy!

If you don't have a Silpat, get one!

I then use a regular large spoon to scoop out my cookies. I'm able to fit 12 cookies on the baking sheet. I ended up with 36 cookies. I love, love, love my Silpat. I got mine from Bed Bath and Beyond. No more burnt cookie bottom and raw dough on top!

When I bake cookies I take try to take them out just before they look done. That way you end up with super soft, chewy cookies. The only thing I might do different is cut back on or omit the nutmeg. A little nutmeg goes a long way.

  • 1/2 lb butter or margarine softened
  • 1-1/2 cups golden brown sugar, packed
  • 2 tsp vanilla extract
  • 2 large eggs
  • 2 cups quick oats cereal
  • 1-1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg(I'd go with 1/4 tsp or none at all)
  • 1/2 tsp salt
  • semi-sweet chocolate chips (eyeball it, I like lots!)

Bake at 350 for 10-13 minutes

Fantasy Friday

I love this house, I believe it is in Georgia. I don't believe I will ever live in Georgia but I can dream about it.

I love the Tudor style, the ivy growing across the front and see there on the left? A bay window. Ahh.

Me: things on the edge of your feet? What things?

Her: These THINGS!

Me: You mean TOES?!

Her: Oh yeah!

If you can't beat 'em, let them draw on you

Sometimes you have to pick your battles

although not pictured, Remedy had a hand in this too.

What can I say, it made them happy and gave me a few minutes of peace.

Who knows Calliope might be a tattoo artist someday.

Candyland Birthday Party

My youngest daughter turned 2 at the beginning of this month. But because of Easter we just had her party this past Sunday. I loved the Candyland party seen here at Party Love and got all my ideas from there.

Here's my birthday girl

How adorable is she? My little Remedy. Thanks to a family member for taking this picture.

Originally I planned on an outdoor party but it wasn't meant to be. It rained pretty good that day so we ended up indoors. Here's some pics from the day..

In addition to all the sweets we had another table full of food that I didn't get a picture of. The menu consisted of pulled pork, artichoke and parmesan brushetta, pigs in a blanket, spinach dip, marinated bocconcini, deviled eggs and fruit.

I think the kids were in heaven with so much candy at their finger tips. Despite the rain the kids had a good time and got to jump in the jumpy house for a little bit when there was a break in the weather. Now it's time to plan my 17 year old's high school graduation party!
